Chai Masala

The “Chai Masala” is a delicious milk tea made with spices. Chai is the most common drink in India and Bangladesh. It is drunk both at home and in small street tea stalls on roadside, or stations. They are not only drunk to wake up in the morning, but several times throughout the day. It is the drink which is offered to the guests when they come to visit.

Chai usually prepared with black tea. Then milk and sugar are added. But “chai masala” contains spices that give it a unique flavour. Usually, it is prepared with green cardamom and fresh ginger. But other spices can be added such as cloves, cinnamon, star anise or nutmeg.

The variety of tea is crucial to make “chai masala”. You should not use the famous Darjeeling or Assam that carries the whole leaves to make your Chai Masala. To prepare it always use the variety “mamri” which is, black tea in small grains. It has a stronger taste that gives depth and flavour to the chai masala along with milk and spices. Lipton Yellow Label Tea, Taj Mahal Tea or PG Tips etc. are some of the brands that I usually used to make my chai masala.

Chai is a drink that has always been and will be an integral part of our daily lives. We enjoy our meetings with friends and family with a cup of chai in hand. Here I leave you the step by step recipe of how to make a delicious, authentic Chai Masala!

Chai Masala (Té con leche y especias)

 Ingredients

  • 250ml of water
  • 2 pieces of ginger about 1cm thick
  • 2-3 green cardamoms
  • 2 teaspoons black tea
  • 200ml of whole milk
  • Two teaspoons of sugar

 

Instructions:

-Pour water into a saucepan on medium-high heat.

-While the water is heated, in a mortar coarsely grind the ginger and cardamoms.

-Then add them to the hot boiling water.

-Let the water boil with ginger and cardamom for a few seconds. Then add the black tea and let it boil for another two minutes so that it releases all its colour and flavour.

-Add milk and sugar. Let the whole thing boil for a minute.

-Then strain it with a small strainer into a teapot or directly into the cups and serve it with any Indian snacks, cookies, or buns.
