Rinse the lentils under running water, drain and set them aside in the strainer.
Cut the vegetables into small cubes.
Put a little bit of oil in a pan on medium-high heat. When it is hot, add the cauliflower with a pinch of turmeric and salt. Sauté them until golden and soft. Remove and set aside.
In the same pan add more oil. When the oil is hot enough add dry red chilli and cumin seeds.
When they start to sizzle, add chopped onion. Fry the onion until it becomes transparent. Add ginger-garlic paste.
Fry for a few seconds and add turmeric, red chilli powder and tomatoes. Saute for one minute. Then add chopped vegetables, fried cauliflowers, and red lentils.
Mix and saute everything for a few seconds. Add water and adjust the salt.
Let it cook on medium-low heat until the vegetables are tender, and the lentils get a creamy texture.
Serve with Chapati or Basmati rice.
