Cut all the vegetables into small cubes
Put a pan with oil on medium-high heat. When the oil is hot, add dry red chillies and Panch Phoron.
When they start to sizzle add the vegetables, turmeric, and salt. Cover the pan with a lid and lower the heat to medium.
Let it cook for 10 to 12 minutes while stirring occasionally. Uncover the pan and check that the vegetables are well cooked.
Serve them with Chapati or as a side dish.
