Easy Vegetable Stir Fry (Sabji Bhaji)

  • 300g mixed vegetables (cauliflower, potatoes, carrots, green beans, peas, zucchini etc.)
  • 1 teaspoon of Panch Phoron
  • 2-3 dry red chillies
  • 1 teaspoon turmeric powder
  • 1 tablespoon oil
  • Salt to taste


  • Cut all the vegetables into small cubes
  • Put a pan with oil on medium-high heat. When the oil is hot, add dry red chillies and Panch Phoron.
  • When they start to sizzle add the vegetables, turmeric, and salt. Cover the pan with a lid and lower the heat to medium.
  • Let it cook for 10 to 12 minutes while stirring occasionally. Uncover the pan and check that the vegetables are well cooked.
  • Serve them with Chapati or as a side dish.


Tips and tricks:

  • To prepare this stir fry, you can use a store-bought ready vegetable mix.
  • You can buy Panch Phoron already mix, or you can make it by mixing equal parts of cumin, nigella, fenugreek, mustard and fennel seeds.
