Boil the bobby beans and green peas with water and salt. When they are cooked, we drain them very well and set them aside.
Blanch the spinach leaves in boiling water for 2 minutes. Then remove and put them into cold water for 1 minute. Drain well, there cannot be any water left.
Chop the spinach and bobby beans. If water keeps coming out, drain again.
In a bowl put the boiled potatoes, the boiled peas, the chopped spinach and bobby beans. Mash everything very well.
Add all the spices, salt, chopped coriander and breadcrumbs. The breadcrumbs serve to bind the dough.
Take small portions and shape them round and flatten them (see photo). Put some oil in the palm of your hands to make the process easier.
In a frying pan put a little bit of oil. When it is hot, place the kebabs and fry them on both sides until crisp and golden.
Serve them hot with yoghurt sauce.
