  • 600g boneless thighs or chicken breasts
  • Bamboo or metal skewers
  • 2 tablespoons oil (for marinating)
  • Oil for frying
  • 125g plain yoghurt
  • Salt to taste

For the green paste:

  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 2 green chillies
  • A piece of ginger (about 3cm thick)
  • 3 garlic cloves
  • 30g cashew
  • 2 tablespoons lemon juice
  • Salt to taste

  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon black pepper

  • Cut the chicken thighs into small cubes of 3cm approximately.
  • In a blender add all the ingredients of green paste. Blend until getting a smooth paste.
  • In a bowl put the chicken pieces and add all the ground spices, yoghurt, salt, oil, and the green paste. Mix well to coat each piece and leave it for marinating overnight or four hours in the fridge.
  • Soak the bamboo sticks in the water for 30 minutes.
  • Then thread the marinated chicken pieces on the skewers.
  • In a grill pan put a little bit of oil and fry the skewers until they are perfectly cooked and golden on each side.
  • Serve them hot with a yoghurt sauce (Raita).

Tips and tricks:

  • The marination time is very important for this recipe. It is preferable to marinate the chicken overnight or for at least 3-4 hours.
  • To prepare the chicken skewers, you can use chicken breasts instead of chicken thighs.
  • If you are going to use bamboo sticks, soak them for half an hour before forming the skewers. This way they do not burn while cooking the chicken skewers.
