This delicious and colourful mango salad is one of my favourite for the summer season. Freshly sliced mango with red-green bell pepper and red onion make this dish like sunshine on a plate.
I usually cut them into very thin strips to make them more appealing, but you can cut them into small pieces. Choose mango with a firm texture, not the ripe one.
The dressing with rice vinegar, sugar, and sesame oil makes this salad so delightful. Also, add some roasted sesame seeds to give it extra crunchiness. I am sure you will love it……
Ingredients
- 1 large mango
- Half red bell pepper
- 1 green bell pepper
- 1 red onion
- 2 tablespoons roasted sesame
For the dressing:
- 2 tablespoons of rice vinegar
- 2 tablespoons sesame oil
- Pinch of sugar
- Salt to taste.
Instructions:
-Cut all the vegetables into thin strips and put them in a large salad bowl.
-Whisk all the ingredients of the dressing and add it to the salad. Mix everything very well and sprinkle with roasted sesame on top.
Tips and Tricks:
- If you don’t have sesame oil, use any mild flavoured oil instead of olive oil. It is too strong for this delicately flavoured mango salad.
- For this mango salad choose mango with a firm texture, not the ripe one.
