Red Lentil Curry with vegetable (Sabji Dal)

This Sabji Dal is the perfect combination of healthy and deliciousness. I prepared it with red lentils and vegetables. Perfect to use your leftover veggies in the fridge. Some onion, ginger-garlic paste and just a little bit of spice make this dal so delightful!

 It has a creamy texture and thick consistency. I usually make this dish to eat with some hot Chapatis. But you can also prepare it lighter like a soup. Tastes so good.

Red Lentil Curry with vegetable (Sabji Dal)

 

 Ingredients

  • 150g red lentils
  • 1/2 onion finely chopped
  • 2 small tomatoes chopped
  • 300g mixed vegetables cut into small cubes
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons oil
  • 500ml water approx.
  • Salt to taste

  Spices:

  • 1 teaspoon cumin seeds
  • 2 dry red chilli
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder

 

Instructions:

-Rinse the lentils under running water, drain and set them aside in the strainer.

-Cut the vegetables into small cubes.

-Put a little bit of oil in a pan on medium-high heat. When it is hot, add the cauliflower with a pinch of turmeric and salt. Sauté them until golden and soft. Remove and set aside.

-In the same pan add more oil. When the oil is hot enough add dry red chilli and cumin seeds.

-When they start to sizzle, add chopped onion. Fry the onion until it becomes transparent. Add ginger-garlic paste.

-Fry for a few seconds and add turmeric, red chilli powder and tomatoes. Saute for one minute. Then add chopped vegetables, fried cauliflowers, and red lentils.

-Mix and saute everything for a few seconds. Add water and adjust the salt.

-Let it cook on medium-low heat until the vegetables are tender, and the lentils get a creamy texture.

-Serve with Chapati or Basmati rice.
