Red Lentil Fritters (Piyaju)

Red lentil fritters or Piyaju is a trendy appetiser in Bangladesh. Especially during the month of Ramadan. During Ramadan, in the afternoon before Iftar, all the streets stalls are loaded with fritters, traditional foods and sweets. Iftar is the time when Muslims break their fast after a long day. Houses start from noon to prepare their appetisers, snacks, meals, and drinks for this moment which is very special for them. Piyaju is one of the star appetisers for the Iftar time.

Piyaju is one of my favourite appetisers for its taste and texture. Also, it’s effortless to make. You only need three basic ingredients to make these crunchy and crispy bites.

Red Lentil Fritters (Piyaju)

  Ingredients

  • 200g red lentils
  • 1 large onion, finely chopped
  • 1 teaspoon turmeric
  • 1 teaspoon ginger-garlic paste
  • 2-3 tablespoons fresh coriander leaves chopped
  • 1-2 green chillies chopped
  • Salt to taste
  • Oil for frying

 

Instructions:

 -Soak the lentils for three to four hours.

 -Then drain all the water very well and grind them in a food processor.

 -Put the grind lentils in a bowl and add the remaining ingredients. Mix everything very well.

Put a pan with plenty of oil. When it is hot enough, take small portions of dough with a spoon and add them to the oil.

Fry them over a medium flame until they are golden brown. Serve with Mint Chutney or ketchup.

Tips and Tricks:

  • You have to drain the lentils very well after soaking.
  • For grinding the lentils do not add water, they don’t have to be very fine.
  • An excellent crispy Piyaju should have a lot of onion, so make sure to add plenty of onion.
  • You can prepare them without ginger-garlic paste, but I usually add very little because it increases the taste a lot.
