Saag Paneer is a classic Indian vegetarian dish with spinach and Paneer. Saag refers to any kind of leafy green vegetables such as spinach, fenugreek, mustard greens, basella, etc. Usually served with chapati or basmati rice.
Paneer is an Indian cottage cheese that has a firm texture, which makes it possible to prepare dishes without melting. The preparation of Paneer is very easy. You can also substitute it for Tofu for the vegan option.
Although I have prepared it with frozen spinach, the fresh ones are much better. I’ve flavoured them with cumin seeds and grated ginger. Also, add some basic spices such as turmeric and dry red chilli.
It is a delicious and flavourful vegetarian dish, ideal to serve with Chapati and Basmati rice.
Ingredients:
- 400g frozen spinach/fresh spinach
- 100g Paneer cut into small cubes
- 2 teaspoons grated ginger
- 2 dried red chillies
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2-3 tablespoons oil
- Salt to taste
Instructions:
-Put a pan with oil on medium-high heat. When the oil is hot, add cumin seeds and dry red chillies.
-When they start to sizzle, add the defrosted spinach with all the liquid, turmeric, and salt.
-Mix everything, add a little water, and cover the pan. Let it cook over low heat until the spinach is perfectly cooked and there is no water left.
-Add the grated ginger and mix.
-Put a separate pan with a little oil on medium-high heat. Add Paneer cubes with a pinch of turmeric and toss them for a few seconds. Add them to the cooked spinach and mix.
-Serve with basmati rice or chapati.
Tips and Tricks:
- While frying Paneer, it has to be for just a few seconds; otherwise, it gets hard and rubbery.
- You can sprinkle Garam Masala on top before serving.
- You can serve this dish as a first course or as a garnish.
