Sautéed Okra Curry

Okra is a vegetable also known as Quimbombó, Molondrón, Chimbombo, etc. It is a tropical plant of African origin that later extended all over India, Asia and Central America.

It is green in colour and has an elongated shape very similar to a green pepper or a zucchini. Because of its curious shape, it is also known as “Lady’s finger”.

Okra has many nutritional benefits. It contains protein, vitamin A, C, K, vitamin B9 and vitamin B6. It has high fibre content and minerals such as iron, magnesium, potassium and zinc. It is very low in calories.

When we cut the Okra, a sticky substance comes out. This substance is called Mucilage and is very beneficial for digestive health.  This substance is ideal for thickening soups and stews.

It can be served in many ways: sautéed, steamed, stuffed, baked, fried in tempura, in soups and stews. When you buy the Okra, you should choose the small and green ones. The tender ones are usually with better taste. To prepare any dish with Okra, you must wash and dry them very well before cutting them. In this way, you will avoid a lot of mucilage to come out and make it difficult to cut them.

Today I propose a simple recipe of Sautéed Okra with tomato and spices.

 Ingredients

  • 200g Okra sliced
  • Half onion chopped
  • Two tomatoes chopped
  • One teaspoon cumin seed
  • One teaspoon turmeric powder
  • Two-three green chillies (optional)
  • Two tablespoons oil
  • Salt to taste

 

 Instructions:

  – Put a frying pan with oil, over medium-high heat. When it’s hot, add the cumin seeds.

  – When the cumin seeds start to crackle, add okra and onion. Sauté for a few seconds.

  – Add turmeric powder and salt. Continue sautéing for about 2-3 minutes. 

  – Add the tomatoes and green chillies. Mix everything well.

  – Cover the pan and let it cook for five minutes or until the okra is fully cooked.

  – Serve with white rice or Roti.
