This delicious melt in your mouth Carrot Barfi is very similar to Gajar Ki Halwa. Freshly grated carrots cooked in milk, then sauteed with Ghee, sugar, and milk powder for a thicker fudge-like consistency so that we can cut into shapes once it cools. A perfect festive recipe to enjoy with family and friends.
Ingredients:
- 500g grated carrots
- 300ml whole milk
- 120g sugar
- 50g butter or Ghee
- 120g milk powder
- ½ teaspoon cardamom powder
- Dry fruits (pistachios, almonds, raisins etc.)
For the Mawa:
- 100ml whole milk
- Two tablespoons of sugar
- One tablespoon of butter or Ghee
- 150g milk powder
Instructions:
-Ingredients for Carrot Barfi.
-Put a non-stick pan over medium-high heat with the grated carrots and milk.
-Mix and cover the pan. Cook until the carrot is cooked and absorbs all the liquid.
-Add sugar and butter or Ghee. Mix and cook over medium heat for a few minutes.
-Add the milk powder, cardamom powder and stir continuously.
-Add half of the chopped dry nuts and raisins.
-Stir continuously on a medium-low flame until the mixture thickens and separates from the pan.
-Remove and place it in a greased pan, flatten the top part with a spatula. Sprinkle with chopped dry nuts and gently press them with the spatula.
-Let it cool at room temperature and cut into small squares before serving.
Carrot Barfi with instant Mawa:
-Ingredients for instant Mawa.
-Put a non-stick pan on medium-high heat. Add milk, sugar and Ghee or butter.
-Wait until it melts and add the milk powder. Then mix everything, stirring constantly.
-Gradually it will turn into a thick paste and remove it from the heat.
-Place it on top of the carrot barfi and spread it with a spatula over the entire surface.
-Sprinkle with chopped dry nuts and gently press them with the spatula.
-Let it cool at room temperature and cut into small squares before serving.

-You can prepare your Gajar Ki Barfi without this Mawa layer. It is totally optional.
